Gluten Free Pancake? Muffin?

(I am going to just copy a post I made to the Vita-Mix User's Group...)

Two days ago I made some gluten-free cereal (looked like cream of wheat, but of course, had no wheat in it!). It was a flop with the kids (and I had to admit it was rather bland tasting to me too).

I couldn't bring myself to throw the left-overs away so it went into the fridge. The next day, I got an idea.

I put a couple of "globs" (there I go again, I really will try to measure next time - they were large spoonfuls) of the cooked cereal left-overs into my mini wet container and added an egg, a hand full of raw almonds, a small amount (I would guess 1/4 cup) of chopped dates (that I had previously chopped in the VM) and blended until the almonds were "chunked up". I fried this mixture in coconut oil. It was pretty good but did not hold together well.

Today, I did the same thing but with two eggs. Voilla... pancakes!!! (a little soft on the inside and well-done on the outside, but I think that cooking at a lower temperature for longer would have taken care of that.

I think you could also plop this stuff into a muffin tin and make something close to a muffin???

I think this would work with left-over cooked oatmeal too? I'm going to try that next.

Also, I wanted chunks of almonds in it - you could powder the almonds before adding any wet ingredients if you wanted it more "flour-ey". Other ideas for additions: flax seeds (or flax seed meal), raisins, craisins, chopped apples, sunflower seeds, etc.

I'd love to hear if anyone tries this or if anyone can improve on it with some ingredient ideas I haven't yet thought of! Oh, how about adding cinnamon?

Blended Salad

1 bunch of Italian Parsley
leafy tops of 3 celery stalks
1 cucumber (skin washed and included)
2-3 broccoli florets
1 clove garlic
1 scoop hemp protein powder
1 small "glug" each of ACV (apple cider vinegar), and Bragg's Liquid Aminos (good stuff - look it up in Google)
juice of 1/2 lemon (I wrap cheese cloth around the lemon and squeeze - the cheesecloth traps the seeds - I rinse and re-use the cheese cloth a few times)
1 heaping tsp. of tahini
3-4 shakes of dried seaweed (I keep this in a shaker - it has been previously chopped in the VM dry container)
2 cups of ice

Shredded Chicken

I used my Vita-Mix to shred 4 cooked chicken breasts that I had in the fridge. I bought a container of "Pulled BBQ Chicken" on sale, but I don't like all of the BBQ sauce that it comes in (too much for me). So I added a good portion of the Shredded Chicken and diluted the sauce and increased the quantity so that one small container of Pulled BBQ Chicken could feed all 5 of us "Savages".

I put the rest of the shredded chicken into the fridge - will probably use it for chicken salad.

Introduction

I've decided to blog a daily "diary" of what I make in my Vita-Mix machine every day.

I make some wild and whacky things (I go for health and can give up taste if necessary), but I also make stuff for my husband and three kids that has to taste good so I hope that this "diary" can help someone with recipe ideas or help them see that you can use a Vita-Mix in MANY ways other than just to make smoothies!!!
